It is not hard to find a potato chicken recipe, even though potato is not usually one of the ingredients you use in cooking a chicken dish. When one thinks of the combination of chicken and potato the normal reaction is that of roast chicken served with mashed potatoes and gravy. However, you can use the flakes of potato that you find in instant mashed potato to make a coating for chicken when you want to make it really golden brown and crispy in a potato chicken recipe.

What about a potato chicken recipe that uses crushed potato chips as the coating?

Ingredients:

2 eggs

1 cup of milk

Pieces of chicken (precooked)

2 small packages of potato chips crushed (any flavour)

Directions:

Beat the eggs and add the milk.

Dip each piece of chicken into the mixture and then roll in the crushed potato chips.

Deep fry the chicken or place it on a greased cookie sheet and bake at 350° until golden brown.

A variation on this potato chicken recipe is to grate up two potatoes to use as a coating instead of the crushed potato chips. However, you do have to deep fry the chicken if you use raw potatoes in order for the potatoes to cook properly. The batter for the chicken pieces makes them taste just like they are coated with French Fries.
