Takes about one hour in total, most of this is just waiting for it to be ready.
Ingredients
4 chicken joints
About 1 lb, 600 grams of potatoes ( 4 medium potatoes)
2 tablespoons of olive oil, plus a little butter
I large lemon (scrub off any wax)
2 cloves of garlic, peeled and crushed
2 teaspoons herbes de Provence or any other herb mix you like. Rosemary would be good, also tarragon.
Salt and pepper
Method
Heat oven to 200 C/ 400 F/ Gas 6. Peel and slice the potatoes into slices. Smear your roasting tin with the oil and butter and then lay the potato slices over the base in a single layer. Season with the salt and pepper. Cut half the lemon into thin slices and lay these on top of the sliced potatoes together with the herbs and garlic. Add 2 tablespoons of water. Lay the chicken portions skin side down on top. Squeeze the other half of the lemon over all and drizzle with more olive oil and season again. Bake for 30 minutes and then turn chicken pieces over to brown second side. Turn oven down a little 190C/ 375F/Gas 5 and cook for about another half an hour. Potatoes should be golden brown and crisp Remove lemon pieces before serving.
