Ingredients:

3 boneless ,skinless chicken breasts (you can buy boneless chicken breasts or you can debone and remove the skin from bone-in chicken breasts)

2 tbsp of cooking oil (olive oil works well and is a healthy choice)

1 ½ cups of sliced mushrooms

½ cup of sliced celery

½ cup of green pepper, finely chopped

½ cup of red pepper, finely chopped

½ cup of green onion, finely chopped

1 can of bamboo shoots, drained

2 tbsp of dry sherry

2 tbsp of soya sauce

2 tbsp of cornstarch

½ can of chicken broth

3 cups of cooked rice – steaming hot

Directions:

Cut the boneless, skinless chicken breast into slices. Heat the oil in a large frying pan and add the sliced chicken. Saute for four or five minutes. Add the vegetables (celery, mushrooms, peppers, bamboo shoots and onions) to the chicken and stir dry for a further 3 or 4 minutes.

Next add the sherry and the soya sauce to the mixture in the pan. Cover and let cook for two minutes.

To make a thick sauce, combine the cornstarch with the chicken broth in a small pot and cook until it thickens, stirring constantly.

Remove the chicken from the pan and place in a serving dish. Pour the sauce over the chicken and serve spooned over hot rice.

This dish will give you enough for 6 servings.
