Other wise known as chicken and mushrooms with pasta. Takes about an hour if baking
I t is worth buying dried porchini mushrooms for this ( they will need soaking) but you could use fresh.
Ingredients
2 or 3 boneless, skinless chicken breasts, cut into chunks
1 container of fresh mushrooms or a packet of porchini mushrooms soaked for 20 minutes
1 bell/sweet peppers, seeded and diced
1 large onion, peeled and chopped
1 lb/500 grams. cream cheese or whipping cream
1-1/2 tablespoons of olive oil
garlic to taste , about 2 cloves fresh or 1/2 tsp. of garlic powder)
3/4 package of spaghetti noodles (cooked). You could of course use any noodles you have.
Method
In a large pan combine the chicken, onion, bell peppers, drained mushrooms and garlic. Cook for 5 minutes until onion and peppers are limp and translucent. Add the cream cheese – you might not want to use all of it. Stir and continue to cook until chicken is tender. Some people at this point would transfer the mixture to an oven proof dish on top of the cooked noodles and bake for 15 minutes. Others would serve it as it is with a green vegetable such as steamed broccoli or mange tout.
