Chicken and Rice Bake Serves 4

This takes10 minutes to prepare and 50 minutes to cook plus a few minutes standing time.

Ingredients

2 cups of chicken or vegetable stock. You could use a diluted can of condensed chicken or vegetable soup.
3/4 cup uncooked  long-grain white rice
1/2 tsp. onion powder or ¼ onion , chopped fine
1/4 tsp. ground black pepper
2 cups mixed vegetables
4 skinless, boneless chicken breasts halves
1/2 cup shredded cheese – Cheddar or Gruyere work well

Method

Heat the oven to 190C/375°F/Gas 5. Place the stock, rice, onion powder or chopped onion, black pepper and vegetables in a 2-quart shallow baking dish. Top with the chicken pieces and season. Cover the baking dish and bake for 50 minutes by which time the chicken will be cooked and the rice perfect. Scatter the cheese on top and let it stand  10 minutes to allow cheese to melt or you could remove dish from oven after 40 minutes, add cheese and return it for last 10 minutes. You could substitute some Parmesan for other cheese. To make it spicier add ½ teaspoon of chilli flakes to pepper.
