Hawaiian Chicken, serves 4

It is of course the pineapple that makes this Hawaiian.

Preparation time - 1 ½ hours including preparation and marinating time.

Ingredients

4 skinless, boneless chicken breasts
1/2 cup unsweetened pineapple juice
1/4 cup. vegetable or olive oil
1 tablespoon brown sugar
1 teaspoon of garlic powder or a peeled crushed garlic clove.


2 teaspoons dry mustard powder, or use 2 teaspoons of made Dijon mustard if you prefer a milder version
2 teaspoons ground ginger
¼ teaspoon ground pepper

Method

Simply combine all the ingredients in a pan except the chicken pieces. Mix, bring to boil and then simmer for five minutes. Allow to cool before pouring over raw chicken. Leave this in the fridge for an hour or longer. Drain the chicken and grill 8 minutes each side. You can use the sauce as a baste. Serve with seasonal vegetables.
