You can use a mild mustard such as Dijon, or a hotter type such as Colman’s English as you like. Preparation time 5 minutes and 50 minutes cooking. And so easy.
Ingredients
4 chicken portions – these can be skinned and bones or not as you like.
1/4 cup butter, melted, or use a low fat spread
1/4 cup honey or perhaps maple syrup
1/4 cup prepared mustard of your choice
1 teaspoon salt
1 teaspoon curry powder, as mild or as hot as you want or use a garam masala mix
Method
Preheat oven to190C/375°F/Gas 5. Place the chicken pieces in a large shallow baking pan, skin side up. Combine the melted butter or spread, honey, mustard, salt and curry powder and pour this mixture over the chicken portions. Bake in the preheated oven for 50 minutes, basting every 15 or so minutes with pan drippings, until the chicken is browned and tender and the juices run clear. ( Stick a fork into thickest part.) Serve with green vegetables and mashed potatoes.
