This is great for a party, especially as it cooks slowly in a crockpot giving you loads of time for everything else.
Ingredients
12 boned and skinned chicken breasts
½ cup peanut butter - I prefer crunchy, but smooth is fine
2 tablespoons honey
1 teaspoon dried cumin
Few mint leaves chopped fine
1 vegetable stock cube
Method
Place peanut butter in a bowl with the mint, cumin and honey. Microwave this for 30 seconds. This just thins it a little and makes it easier to work with. Spread about 2 teaspoons of this mix on each breast and roll into a parcel which you should secure with a cocktail stick. Arrange these packages in a crockpot ( slow cooker) Make up stock according to directions and pour over. Add enough water to cover all parcels by about a fingers depth. Cook for 5 or 6 hours. Remove parcels and let drain. Don’t waste the stock, though you might want to skim off any fat.
Serve with a big bowl of cous cous or rice and lots of crunchy vegetables or salad.
