What could be healthier than a low fat chicken breast salad?
Ingredients
2 small or one very large skinless and boneless chicken breast, diced
Lettuce, or other green salad leaves such as Rocket of Spinach, enough for two. 2 Little Gems would be perfect
Sweet (bell) pepper, deseeded and sliced
2 smallish onions or one larger one, peeled and sliced
1 tablespoon, 30 grams of butter
2 celery stalks
1 tablespoon , 25 grams of flake almonds, toasted in a dry pan
A handful of sultanas or raisins
2 tablespoons/50 grams spicy salad dressing with chillis or you could stir chilli and dried tomato paste into mayonnaise
Method
Melt the butter in a pan over a medium heat and use this to cook the chicken. Tear the lettuce or greens and finely slice the celery. When the chicken is almost ready add the onions and peppers to pan. Once cooked drain and then toss with all rest of ingredients except dressing. Divide between plates and drizzle on dressing.

Chicken breasts are perfect to carry stuffing, Queen Elizabeth II has just had it for her 83rd birthday meal so try these recipes and be in good company. You can either serve with the skin on and tuck the stuffing between the skin and the flesh or for a lower fat option make a slit in a skinned chicken breast and fill with your chosen stuffing mix. A couple of cocktail sticks come in handy to hold it all together while cooking.
